The Broke Student's Recipe Corner

For food lovers, preparing budget-friendly meals can be a challenge. But inexpensive food can still be delicious, not to mention a necessity for students who don't have much money to spare. That's why the following recipes are all cheap, tasty, and quick. Vegetable soup, breadsticks, and pasta never disappoint.
Vegetable Soup
You can really use whatever veggies you like in this sort of soup.
½ onion
1 T butter
300 gr carrots
300 gr sweet potatoes
4 dl water
3 chicken bouillon cubes
2 T curry powder
1 T turmeric
1 T oregano
250 ml heavy cream
Mince the onion and sauté in a pan with the butter. Add the water, veggies, and spices. Boil until the veggies are soft and then use an immersion blender or a food processor to puree everything. Finally, stir in the cream. Breadsticks go perfectly with this soup.
Breadsticks
3 ½ dl lukewarm water
3 tsp dry yeast
1 ½ tsp salt
1 ½ tsp sugar
4 T oil
8 dl flour
This recipe works well with a mixer. Add the dry yeast, salt, sugar, and oil to the lukewarm water and blend together. Then, add one deciliter of flour at a time until the dough no longer sticks to your fingers. While you're waiting for the dough to rise, you can prepare the soup. Flatten the dough out like a rectangular thick-crust pizza and score the dough into strips without cutting all the way through. Brush the breadsticks with oil and some tasty spices (for example "Best á allt" spice blend or garlic). Place the breadsticks in the oven and bake for 12 minutes at 220 degrees C. Brush the breadsticks with the spice blend again after you take them out.
Pesto Pasta with Onion and Mushrooms
Pasta (approx. 130 grams per person)
Pesto – as much as you like!
1 onion
3-5 mushrooms
Sauté the onion and mushrooms. Boil the pasta, drain, then add the mushrooms, onion, and pesto. For a real treat, add feta cheese, parmesan, bacon, or chopped chicken. The breadsticks also go well with this dish.
